A lot of people have been raving this week about cauliflower rice and how it can serve as a delicious, low carb alternative to rice when following the extra easy SP plan. So I thought I'd throw up a post on my take on cauliflower rice.
What you'll need:
1/2 Head of cauliflower
small onion, finely chopped
Clove of garlic, crushed
Salt and pepper to taste
Put the cauliflower head into a bowl. Using a hand blender, whizz, stop and repeat until the cauliflower has broken down into rice-sized grains.
Spray a non-stick frying pan with frylight and add onions and garlic. Allow to brown before adding the cauliflower. Saute the combination for about 5 more minutes and add salt and pepper to taste.
